Cozonac

Dolce tipico del Natale rumeno

- 1 kg farina forte
- 50 gr di lievito di birra
- 8 gr di sale
- 1/2 litro di latte
- 300 gr di zucchero
- La buccia di un limone, grattugiata
- 4 tuorli
- 250 gr di burro
- 30 ml di olio di girasole
Per il ripieno di noci:
- 350 ml di latte
- 125 gr di cioccolato, tritato
- 100 gr di zucchero
- 40 gr di farina
- 150 gr di noci polverizzate
Per il ripieno all’uvetta
- 100 gr di uvetta lavata e asciugata
- 130 gr di gelatine di frutta “Rahat” , miste, tagliate a cubetti
Per la finitura
- 1 uovo, sbattuto
- Olio di girasole

Scaldare il latte con lo zucchero e la buccia di limone. Lasciar intiepidire.
Fondere il burro.
In una grande ciotola sbriciolare il lievito e scioglierlo con il latte a temperatura ambiente.
Aggiungere parte della farina , il sale,il burro fuso, i tuorli e la rimanente farina. Impastare a lungo; si può continuare in planetaria.
L'impasto deve risultare molto morbido.
Mettere nelle mani abbondante olio di girasole e trasferire l'impasto in una capiente terrina, coprire e lasciare lievitare.
Durante la lievitazione preparare i ripieni.
Per il ripieno alle noci: in una casseruola mettere il latte con lo zucchero e il cioccolato, quando tutto si è sciolto aggiungere la farina e con l'aiuto di una frusta mescolare; far prendere dolcemente l'ebollizione e cuocere per circa 5 minuti. Far raffreddare e in seguito aggiungervi le noci polverizzate.
Per il ripieno all'uvetta : mescolare uvetta e cubetti di  gelatine.

Trascorso il tempo di lievitazione ...
Per uno stampo da plumcake di 26 cm di lunghezza:
Staccare due pezzi di impasto di 500 gr ciascuno con le mani unte bene con l'olio di semi di girasole. Stendere i pezzi sul tavolo infarinato aiutandosi con le mani e formare due rettangoli; mettere al centro di entrambi per il verso della lunghezza abbondante crema alle noci, chiudere arrotolando su se stessi. Formare con i due filoni una treccia e metterla nello stampo.
Lievitare e cuocere a 170°C per circa 40 minuti.
Per uno stampo rotondo di 20 cm di diametro:
Con circa 700-1000 gr di pasta formare un rettangolo abbastanza largo sempre con le mani unte di olio (se necessario cospargere il tavolo con la farina), cospargere la pasta con uvetta e gelatine, arrotolare e mettere  nello stampo. Lievitare e cuocere a 170°C.
Per uno stampo a ciambella : fare palline di circa 80 gr, stenderle e farcirle con i ripieni. Chiudere e mettere in cerchio ben distanziate fra di loro.
Far lievitare e cuocere a 170°C.
Sformare e lasciar raffreddare. Si conserva per 2 giorni.

- 125 gr bitter sweet chocolate
- 100 gr sugar
- 40 gr flour
- 150 gr ground walnuts, crumbled
For the raisin filling
- 100 gr raisins, rinsend and dried
- 130 gr “Rahat”  mixed fruit gelatin from Romania, cubed or candied fruit
For baking
- 1 whole egg, beaten
- Sunflour oil

Scald the milk with sugar and lemon zest. Let cool down. Melt the butter.
In a large bowl crumble the yeast and melt with the milk at room temperature.
Add part of the flour, salt, butter, yolks and the remaining flour, all little by little in this order. Kneed the dough very well, better. In the end the dough must be soft.
Grease your hands with the oil make a ball and place it in a large bowl greased with oil to rise. Cover and let almost double.

For the nut filling: in a casseruole heat the milk with the sugar and chocolate. When totally dissolved add the flour and whisk well not to form lumps. Let boil and cook for 5 minutes. Let it cool down and add the walnuts.
For a plum cake tin 10” (26 cm) length.
When the dough is ready take two 500 gr parts of it with well greased hands. On a well floured board, roll the pieces out forming two rectangles. In the centre of them put the chocolate filling (lengthwise) close and roll them. Make a brade with the two loaves.
Place it in the tin.
Let it almost double covered in a warm place.
Preheat the oven at 170°C (330°F) and when it ready bake for about 40 minutes or until cooked and golden.

For the raisin filling you need a round tin 20 cm (8”) greased. On a floured bourd roll the remaining dough out and place the raisins and the gelatines.
Roll it (greased hands) and place it in the tin like a spiral.
Let it almost double covered in a warm place.
Preheat the oven at 170°C (330°F) and when it ready bake for about 40 minutes or until cooked and golden.
When cold unmould it. It lasts for 2 days.

Cozonac

Dolce tipico del Natale rumeno

- 1 kg farina forte

News dalla scuola


Cari tutti,

In previsione delle prossime festività natalizie, quest'anno proponiamo le prime quattro lezioni del corso di Pasticceria II. Da questa volta le lezioni saranno tenute da Andrea Bianchini, chi vuole può iscriversi al corso intero (4 lezioni prima di Natale e 4 ad anno nuovo), oppure alla prima metà o infine alle singole lezioni, tutte belle ed interessanti. Da pochi giorni abbiamo messo in programma anche due lezioni per i menù delle feste. La prima si chiama Menù di Natale "a metà prezzo!" ed è pensata per aiutare gli allievi a comporre un menù festoso e ricco facendo però attenzione al budget ... anche il costo della lezione è ridotto! La seconda è un Menù di Natale dal Mondo, con piatti europei e non solo.

Inoltre vi comunichiamo che la scuola sarà chiusa per le vacanze dal 22 dicembre al 6 gennaio. Chi desidera regalare per Natale un corso o una lezione di cucina ci chiami per tempo altrimenti non ce la facciamo a consegnarvi il grembiule e la shopper blu griffati "Cordon Bleu".

... dimenticavamo la ricetta (anche in inglese!): eccone una invernale col calore della cucina siciliana

Insalata di Arance
per 4 persone
- 4 arance (tarocchi)
- 2 finocchi
- 4 cipolline fresche, affettate a rondelle fini
- 4 cucchiai di olio extra vergine di oliva
- 1 ciuffo di prezzemolo tritato
- Pepe nero macinato al momento
- Sale q.b.

Pelare le arance a vivo. Tagliare i finocchi a fettine sottilissime contro fibra.
Adagiare su un piatto largo i finocchi, le arance  e le cipolline e spolverizzare di prezzemolo. Condire con un'emulsione fatta con il succo dell'arancia, olio, sale e pepe.
Questa ottima insalata siciliana viene servita o con piatti grassi o con bolliti o come fine pasto o come antipasto o tra una portata e l'altra essendo molto rinfrescante.

Orange Salad
4 people:
- 4 oranges, segmented (keep their juice; use blood oranges if possible)
- 2 fennel bulbs, sliced
- 1 scallion\spring onion, sliced
- 4 tbsp extra virgin olive oil
- 1 handful of parsley, chopped
- Freshly ground black pepper
- Salt to taste

Peel and segment the oranges. Thinly slice the fennel.
Place the slices of fennel on a serving dish. Add the orange segments and the scallion on top of the fennel. Sprinkle with parsley.
Make the dressing with the orange juice, oil, salt and pepper. Pour dressing over the dish and let it rest for half an hour before serving.
This Sicilian dish is very refreshing and can be served in many ways - as a side dish with rich meals, as a starter, at the end of the meal, or between one course and 
the next.

Novità d'Autunno/ Fall's News


Carissimi allievi, vecchi e futuri,

Vogliamo farvi partecipi del nostro calendario di cui andiamo molto fiere. Ci chiediamo sempre cosa vi possa interessare .... non c'è quasi più niente che non sia stato detto o fatto. Accettiamo quindi sempre proposte da voi ma nel frattempo guardate un po' quello che abbiamo messo in calendario. La nostra proposta nasce dalla voglia di darvi la possibilità di frequentare lezioni nuove, conoscere chef di alto livello, imparare cotture alternative e divertenti, solleticare il palato con nuovi abbinamenti. E perchè no? Usare un po' di scienza in Cucina ....

Arista Arrosto All'Uva
per 6 persone:
- 1 kg di arista senza osso (tenere da parte l’osso tagliato a pezzi)
- Salvia, rosmarino, timo
- Pepe nero macinato fresco
- Sale

- 4 cucchiai di olio extravergine di oliva
- 500 gr di uva nera, spremuta e privata dei semi, tenere qualche chicco a parte per
decorare
- 1 cipolla di Tropea tagliata a spicchi (circa 150 gr)
- 100 ml di mosto d’uva
- 2 cucchiai di miele
- Pepe nero macinato fresco
- Sale

Scaldare il forno a 90 °C.
 
Aprire il pezzo di arista tagliandola a libro nel senso della lunghezza, in modo che si possa farcire e arrotolare. Tritare le erbe, aggiungervi il sale e il pepe. Spalmare l’interno dell’arista con il trito arrotolare e avvolgere in carta forno. Mettere in forno e cuocere per 2 ore e 30 min. Questo si può fare anche il giorno prima.

Intanto in una casseruola scaldare 2 cucchiai di olio e rosolarvi i pezzi d’osso con la cipolla in modo che diventino dorati. Sfumare con il succo d’uva e lasciar ridurre
fino a consistenza sciropposa. Filtrare, completare la salsa con il mosto d’uva e regolare di sale e pepe. Un pizzico di zucchero potrebbe esaltare la sapidità della salsa soprattutto se l’uva non è particolarmente dolce.

Al momento di servire togliere l’arista dalla carta e spalmarla con l’olio ed il miele.

Scaldare una padella, meglio se di ceramica, e rosolarvi l’arista da tutte le parti in modo che diventi dorata e croccante.

Tagliarla e servirla con la salsa e qualche chicco d’uva.
 
Servire con un’insalata di radicchio, verde o rosso, condita con una vinaigrette e con capperi sott’aceto.

Sembra che la parola "arista" derivi da una esclamazione fatta da un patriarca Bizantino. Aristos infatti vuol dire delizioso, meraviglioso.

Below we have also included a recipe for "Roast Pork with Grapes" which Gabriella presented at "Settembre di Cucina Moderna".

Roast Pork with Grapes 
for 6 people
- 1 kg of pork without bone (put aside and save the piece with the bone)
- sage, rosemary, time
- fresh ground black pepper
- salt

- 4 tablespoons of extra virgin olive oil
- 500 gr of black grapes, squeezed and seeds removed (save a few whole ones for decoration)
- 1 Tropea onion, chopped (about 150 gr)
- 100 ml grape must
- 2 tablespoons of honey
- fresh ground black pepper
- salt

Heat the oven to 90 °C.

Open the meat and cut in the long direction, in order to be able to stuff and roll it. Tear up the herbs and add salt and pepper. Smear the inside of the roast with the herb mixture, roll it up, and rest on parchment paper. Put in the oven and cook for 2 hours and 30 minutes. This can also be done one day ahead.

Meanwhile, in a casserole, heat 2 tablespoons of oil and brown the bone of the pork with the onion until it is golden. Deglaze the pan with the grape juice and leave to reduce until it has a syrupy consistency. Strain, and complete the sauce with the grape must. Add salt and pepper as necessary. A pinch of sugar can speed the reduction of the sauce, especially if the grapes are not particularly sweet.

To serve, remove the roast from the parchment paper and drizzle with olive oil and honey. Heat a pan, preferably a ceramic one, and sear the roast on all sides until it becomes golden and crisp.

Cut and serve with the sauce. Garnish with a few whole grapes.

Best served with a radicchio salad, green or red, dressed with a caper vinaigrette.

I perché delle Ricette. Ovvero la cucina scientifica/ The "reason why" of the recepies. In other words: science in the kitchen

Eccoci rientrate dalle vacanze ( ormai solo un ricordo) e subito pronte con la prima novità dell'anno !!!! Una Bella lezione di Cucina !!!
"bhè? - direte voi !! - che novità sarebbe questa ??!!"
La novità consiste nel fatto che questa è una lezione di cucina assolutamente fuori
 dal comune, una lezione che affronta la cucina da una prospettiva totalmente diversa, una lezione di cucina che ci permetterà di comprendere i "perchè" e i "per come" delle ricette che stiamo realizzando....Bello No ?? Bellissimo e soprattutto molto interessante, ci pare !!!
Bene allora veniamo al dunque ovvero ai dettagli:

Davide Cassi  terrà per noi una lezione sulla chimica e fisica applicata alla cucina. Ovvero, più semplicemente, come comprendere cosa succede quando cuciniamo le nostre ricette.

During the class the teacher will explain  "why" ingredients are assembled and "how" they effect each other. isn't it a wonderful surprise? Enjoyable class and above all, very interesting, we guess!

Buone Vacanze / Happy Holidays

Carissimi,

Stiamo per chiudere per qualche settimana di vacanza e vi volevamo salutare con la solita ricetta di stagione. La segreteria rimarrà aperta a orario ridotto ma le mail verranno lette con una certa regolarità. Se avrete bisogno di qualcosa siamo sempre nei paraggi.

Per la prossima stagione abbiamo programmato due corsi sul richiestissimo "Cake Design" e un inedito: La Cucina Scientifica a cura dell'esperto Davide Cassi, autore di un interessantissimo libro sull'argomento. Come sempre ci saranno i nostri classici corsi di Base, Alta Cucina, Pasticceria ecc.

Cosa bolle in pentola?

Una lezione su "Le cocotte" per una mise en place natalizia.

Un corso professionale di Pasticceria intensivo di 8 settimane previsto per giugno-luglio 2013.

Un corso professioanle sulla preparazione del gelato di una settimana. Insegnante Palmiro Bruschi con la collaborazione della ditta Carpigiani che produce macchine per gelato professioanale. Brasato in Salsa di Agresto

per 4 persone:
 
- 1 kg di manzo (sorra o parti poco pregiate)
- 2 cipolle rosse tagliata a fette
- 3 spicchi di aglio schiacciati
- 2 cucchiai di capperi
- 3 acciughe sotto sale diliscate
- 1 bicchiere di aceto (di agresto)
- Olio extra vergine di oliva
- Sale e pepe
- 1/2 l d'acqua
 
Legare la carne con lo spago, metterla in un tegame insieme a tutti gli ingredienti. Cuocere per circa 2 ore, a pentola coperta, aggiungendo se necessario altra acqua. La carne deve risultare tenera ed il sughetto abbastanza denso. Passare la salsa e servirla con la carne tagliata a fette. Può essere servito sia caldo che freddo, accompagnato con patate bollite.
 
 
Questo è un tipico esempio di carne cotta in salsa di agresto nel modo fiorentino. Oggi l'aceto di agresto si sostituisce con succo d'uva acerba e aceto, oppure solo aceto ed acqua.

Our classic courses are scheduled starting from the end of September: Basic General Cooking, Alta Cucina, Pasticceria, etc. We are organizing a Pre-Chanukah course on Kosher Italian Cuisine at the end of November under kosher supervision with a mashgiagh on premises. Brasato Fiorentino
(Florentine old fashioned pot-roast)

4 people:

- 2 lbs (1 kg) beef (from the shoulder)
- 2 medium size red onions, sliced
- 3 cloves of garlic, crushed
- 2 tbsps of capers
- 3 anchovies, in filets
- 1 cup of white wine vinegar
- Freshly ground black pepper
- Salt to taste
- Extra virgin olive oil
- 2 cups of water

Tie the meat up. Place it in a saucepan with all the ingredients.
Cook the meat on a low heat for approximately 2 1/2 hours.
Let the sauce thicken. Process the sauce and pour over the sliced meat. Serve hot or cold with boiled potatoes.
