Primavera 2013. Una cascata di eventi


Cari amici, conoscenti, allievi vecchi, nuovi e futuri,
Con la primavera arrivano anche le novità della scuola.
Ricominciano gli eventi Lagostina con lezioni sull'uso degli strumenti più all'avanguardia sul mercato. Gli incontri saranno ricchi di consigli utili sulla cucina semplice e sfiziosa ma soprattutto sana. Il primo di questi, venerdì 18 aprile dalle 18.30 alle 20.30 con "Un menù sano e goloso", vi aspettano omaggi.
In programma il Pesce e i frutti di mare, a partire dal 23 maggio.
Poi ancora Lagostina il 9 e il 28 maggio con "Io antiaderisco" e "Cucina vegetariana con l'antiaderente".
In aprile continua l'Alta Cucina con la Carne, la Pasta e gli Antipasti.
Il nostro mitico ambasciatore del gelato all'estero Palmiro Bruschi, sarà da noi con le sue golosità ghiacciate il 10 maggio. Insegnarà il bilanciamento degli ingredienti con cui preparare da soli gelati e sorbetti classici e moderni.
Torna il Pasticcere Stefano Donati con i suoi favolosiDessert al Piatto il 14 maggio.
Con date da definire Marco Stabile con il suo menù del ristorante L'Ora d'Aria e Domenico di Clemente, chef pasticcere del Four Seasons, con Brioches e Croissants.

Pappardelle fresche con ragù bianco di coniglio
- 6 cucchiai di olio evo
- Un battuto grossolano di cipolla bionda, carota, sedano, aglio, salvia, rosmarino, timo
- L'anteriore di mezzo coniglio disossato e tritato al coltello e il suo fegato, tritato
- 1/2 cucchiaio di maizena
- 100 ml di Vin Santo
- Pepe nero macinato fresco
- Noce moscata
- Sale q.b

In una casseruola dal fondo spesso scaldare l'olio e stufare il battutto per circa 10 minuti a fuoco medio, non lasciandolo dorare troppo nè appassire troppo. Alzare la fiamma e rosolarvi il coniglio senza il fegato. Quando è leggermente dorato, mettere la maizena, mettere il fegato, rosolare e poco dopo sfumare con il vin santo. Aggiungere 200 ml di acqua o brodo caldo, mettere il pepe e la noce moscata e regolare di sale. Cuocere a fuoco lentissimo e coperto per circa 40 minuti o fino a che il coniglio è tenero stando attenti che non si asciughi la salsa. Cuocere la pasta e condirla con la salsa. Ottima l'aggiunta delle olive taggiasche messe all'ultimo momento.

Fresh pappardelle pasta with rabbit sauce
- 6 tbsps extra virgin olive oil
- Roughly chopped onion (1), carrot (1), celery (1), garlic (2), a sprig of fresh sage, fresh rosemary and thyme
- 1/2 a medium-sized rabbit, the top part, boned and chopped, including its liver (separately chopped)
- 1/2 tbsp corn starch
- 100 ml Vin Santo
- Freshly groud black pepper
- Nut meg, grated
- Salt as needed

In a casserole with a thick bottom heat the oil and cook the vegetables gently for 10 minutes over a medium heat. Cover and don't let them brown though they much be still crunchy at the end. Turn the heat up, and add the rabbit to get a light golden colour. Don't put the liver yet. Add the starch, the liver, stir for a few minutes then add the Vin Santo. Add 200 ml (1 cup) hot water or stock, pepper, nutmeg and salt. Cook at a very low heat, and cover for 40 minutes, until the meat is tender. Don't let the sauce dry up. Cook the pasta and mix with the sauce. Pitted good olives can be added in the sauce five minutes before the very end.

The Lagostina lessons with the use of brand new tools and pans, the best ones you can buy. During the cooking classes you will be given tips for a simple but tasty and healthy cooking. The first lesson, "Un menù sano e goloso", is on Friday 18th from 18.30 to 20.30, where the participants will be given free gifts.
The school programme includes Fish and sea foodfrom 23rd of May.
Then Lagostina lessons again on 9th and 28th Maywith "Io antiaderisco" and "Cucina vegetariana con l'antiaderente".
In April the lessons of International Adanced Cookingwill focus on Meat, Pasta and Antipasti.
